Good afternoon my wonderful granolians!
As of a few weeks, keto balls have been my JAM! They are so yummy and so healthy! I got into them when my Mom started making them. I kind of poo pooped hers lol… Just because I am somewhat picky or at least I have been told this:0). My Mom makes everything super healthy and low on the glycemic index! The woman will barely eat fruit ;o)… So for this lady, who kinda has a major sweet tooth, those keto balls just wouldn’t cut it… I decided to make my own… Like most things I sort of throw of a bunch of ingredients in a bowl and see what happens… add more of this… a little of that… The recipe I came up with turned out to be PERFECT! I only used 2 dates to sweeten about 16 balls. Don’t even dream that these are low-calorie; because I can honestly say they are not… but what they are is a great pick me up when you need a little energy.
1/4 cup Cocoa nibs
2 cups Oats
1/4 cup walnuts (nut of choice)
1/8 sunflower seeds
1 cup peanut butter ( nut butter of your choice)
1/8 cup maple syrup (to taste)
Preheat Oven 350 degrees. Cook 10 minutes then be sure to use spoon to move around granola then cook for 10 more minutes. You can also add any dried fruit you like:0). If you do this you may need more peanut butter or something that has more liquid as it should be a bit covered with some type of wet ingredient before you put in the oven.
